Meal plan #9

It’s been a good week for home cooked grub with delicious roasted beetroot risotto on Thursday, braised ox cheeks on Saturday and smoked mackerel and homemade potato farls yesterday. Keane found a firm favourite in the Abel & Cole Spanish potatoes I cooked on Friday with chorizo and poached egg. Our veg box arrived today, and now we have even more beetroot and butternut squash in the fridge, which to my mind can only be a good thing, and a load of mushrooms that need to be eaten up. I’m feeling pretty tired tonight so the menu isn’t terribly inspired this week (mostly one-pot wonders, but that’s a theme of mine). I’ll see if I find time for some impromptu baking to make things a bit more interesting.

In the box:
Beetroot, butternut squash, celeriac, mushrooms, broccoli, kale, floury potatoes, carrots

In the fridge:
Turnip, celery, beef stock, rosemary, chestnuts, apple x 2, orange x 2, cream

Meat and fish:
Chipolata sausages, whole free range chicken


Dinner: roasted butternut squash, chickpea and chorizo stew with cous cous
Use: squash, carrot, chorizo

Dinner: mushroom and butterbean stroganoff with rice and sautéed kale
Use: mushrooms, cream

Lunch: That pesky Moro chestnut and chorizo soup that I meant to cook last week and the week before, but never got around to it, even though it is del-icious.
Dinner: butternut pizza with feta, chilli and rocket
Use: chorizo, chestnuts, butternut

Lunch: leftover soup
Dinner: sausage and flageolet bean stew
Use: kale, rosemary, sausages, carrot, celery

Lunch: French onion soup
Dinner: roast chicken, greens and celeriac gratin (I can’t get enough gratin at the moment)
Use: broccoli, celeriac, onions, beef stock

Lunch: leftover soup
Dinner: chicken risotto (with homemade stock)
Use: leftover chicken, celery, onion, mushrooms

Lunch: Welsh rarebit
Dinner: fridge frittata and warm potato salad
Use: potatoes, kale, tomato, whatever’s left!
